- 2 – 8 ounce packages of light cream cheese ensure it’s at room temperature (softened) for a smooth mix. Fat-free cream cheese can also be used.
- 1 cup light sour cream fat-free sour cream also works well for a lighter option.
- 3 ounces white chocolate squares, melted **do NOT use white chocolate chips as they won’t melt smoothly.
- ¼ cup whipping cream
- 1 cup white granulated sugar
- ½ cup non- fat Greek yogurt
- 1 ½ teaspoons cake batter extract/flavour
- ½ cup rainbow sprinkles
Instructions
Preparing the Base:

Lightly spray an 8 or 9-inch springform pan with non-stick cooking spray, ensuring an even coating for easy release.

In a medium bowl, combine the Oreo cookie crumbs and 3 tablespoons of white granulated sugar. Pour in the ⅔ cup of melted butter and mix thoroughly until all the crumbs are evenly moistened and a thick, crumbly paste forms.

Transfer the crumb mixture into the prepared springform pan. Use a rubber spatula or the bottom of a glass to press the mixture firmly and evenly to the bottom of the pan, neatly tapering the edges. In a small, heat-safe bowl, mix the unflavored gelatin crystals with ¼ cup of cold water and let it sit for 5 minutes to bloom. Stir the melted white chocolate into the cream cheese mixture. Mix on medium speed for 30 seconds, scrape the sides of the bowl again, and then beat on medium-high speed for 2 minutes until the mixture is light, smooth, and fluffy.

With the mixer running on low speed, slowly pour the cooled gelatin solution into the cream cheese mixture. Continue mixing at medium speed for about one minute, making sure to scrape the sides of the bowl halfway through to ensure everything is well combined.

Gently fold in the ½ cup of rainbow sprinkles into the cheesecake mixture using a spatula. *Be careful not to overmix, as excessive mixing can cause the colors of the sprinkles to bleed.
