  • 1 cup dried cranberries
  • cup orange juice
  • ½ sweet yellow pepper
  • ½ onion
  • 1 clove garlic
  • 2 tablespoon red wine vinegar
  • 2 tablespoon sugar
  • ¼ teaspoon cumin
  • ¼ teaspoon course sea salt
  • ¼ cup cilantro fresh

  • In a small saucepan, combine the maple syrup and dried cranberries. Cook over medium heat for approximately 5 minutes, or until the cranberries have softened and plumped up, and the mixture has slightly thickened. Transfer the mixture to a food processor or blender and process until a smooth puree is formed. Set this delicious glaze aside for later use.

Grilled Chicken

  • Preheat your grill to a medium-high temperature. Ensure the grates are clean and well-oiled to prevent sticking.
  • In a small bowl, whisk together the balsamic vinegar and oil. Lightly brush both sides of your boneless, skinless chicken breasts with this mixture. This helps tenderize the chicken and prevents it from drying out on the grill.

  • Carefully place the prepared chicken breasts onto the preheated and oiled grill rack. Close the lid to allow for even cooking and a smoky flavor infusion.

In a medium bowl, combine all the Mexican Cranberry Salsa ingredients (dried cranberries, orange juice, sweet yellow pepper, onion, garlic, red wine vinegar, sugar, cumin, and sea salt). Stir well to thoroughly combine all components, allowing the flavors to meld together.

  • Once the grilled chicken breasts are cooked, transfer them to a serving platter. Generously spoon the fresh Mexican Cranberry Salsa over each chicken breast.
