  • In a large bowl, combine the eggs, half-and-half cream, thoroughly drained and squeezed crushed pineapple (ensure all excess liquid is removed!), pureed carrots (baby food), brown sugar, white granulated sugar, vanilla extract, ground cinnamon, and maple syrup. Beat with a whisk until all ingredients are thoroughly blended and smooth.
    8 large eggs, 1 1 /2 cups half-and-half cream, 2 -128 ml -carrot baby food jars, 4 tablespoon brown sugar, 2 tablespoon white granulated sugar, 2 teaspoon vanilla extract, 2 teaspoon ground cinnamon, 1 -398 ml can -crushed pineapple, drained and liquid squeezed out, ¼ cup maple syrup
  • Pour half of the liquid mixture evenly over the first layer of bread slices, ensuring all bread is well-covered with the cream-egg custard.
  • Carefully add the remaining bread slices on top of the soaked first layer.
  • Pour the remaining half of the liquid mixture over the second layer of bread slices, ensuring even saturation. Evenly sprinkle the finely chopped walnuts over the entire surface of the soaked bread.

  • Cover the casserole dish tightly with aluminum foil and refrigerate overnight (approximately 8 hours). This is crucial for optimal flavor and texture.
  • The next day, preheat your oven to 350 degrees F (176 degrees C). Remove the casserole from the refrigerator and let it sit at room temperature for about 15 minutes, leaving the foil on. Bake in the preheated oven for 40 minutes, covered.
  • Remove the foil and return the casserole to the oven for an additional 15 minutes, or until golden brown and set. Meanwhile, prepare the glaze.

Cream Cheese Glaze

  • In the bowl of an electric mixer, beat the softened cream cheese until it is smooth and creamy.

  • Gradually add the powdered sugar (icing sugar) until fully incorporated and the mixture is smooth. Then, add the milk and vanilla extract, beating until the glaze is light and spreadable.

  • Spread the prepared cream cheese glaze evenly over the warm casserole with a spatula immediately after removing it from the oven.

Garnish

  • Sprinkle the casserole with a light dusting of cinnamon.
  • Pat the pineapple rings dry with a paper towel to remove excess moisture and arrange them decoratively on top of the casserole, as shown in the photos.

  • Dot the insides of the pineapple rings with whipped cream (an aerosol can works perfectly for this).

  • Use a vegetable peeler to create thin, delicate carrot ribbons. Place 2-3 ribbons on top of each whipped cream dollop for an elegant garnish.

  • Add a few extra pieces of chopped walnuts around the garnishes for added texture and flavor.

  • Baby Food Hacks. Baby food pureed carrots are a time-saver, but if unavailable, you can steam or boil and blend fresh carrots in a food processor until smooth. Adjust the consistency with a bit of water if needed.
  • Prevent Sticking. Generously spray your baking dish with non-stick spray, including the sides, to ensure the casserole lifts out cleanly after baking.
  • Overnight Soaking is Key. Allow the bread to soak for the full 8 hours (or overnight) to ensure the egg mixture thoroughly penetrates, creating a rich and custardy texture.

    • Whipped Cream – Use real homemade whipped cream for a richer flavor, instead of spray whipped cream, if you prefer.

    • Pineapple – use fresh pineapple instead of canned, just remember to finely chop and drain thoroughly.

    • Walnuts – you can use pecan pieces instead of walnuts for a similar nutty crunch.

    • Garnish- add some easy Candied Carrots for an extra special treat and decorative touch!

Make Ahead Tips:

  • This can also be reheated and served later. If you are taking it along to a gathering or potluck make sure you bake it in a microwaveable casserole dish (so it can warmed up easily)!
  • You’ll want to add the glaze and garnishes AFTER you reheat it for the best presentation.
  • And be sure to bring along additional maple syrup and whipped cream to serve with it!

Freezing Instructions:

  • You can freeze leftovers! I froze my leftovers of this recipe, fully garnished, and then heated up a piece for 1 minute and 30 seconds in the microwave.
  • The texture was a little more moist after freezing and reheating, so I wouldn’t recommend this for serving initially to guests, but it’s perfectly fine for eating as leftovers for yourself.
