Hearty Ukrainian Breakfast Hash: An Authentic Recipe with Kubassa, Sauerkraut & Dill

The annual Ukrainian dancing season has drawn to a close, and with its conclusion, I find myself in a familiar state of mixed emotions. There’s a certain solace in the regular routine that I’ll undoubtedly miss, yet the promise of a well-deserved break is equally inviting. While a part of me feels a sense of relief, there’s also a touch of melancholy, a quiet acknowledgment that another year has passed, and my children are growing up so quickly. Just recently, we celebrated our rich Ukrainian heritage with a vibrant weekend of dance at the Calgary Ukrainian Festival. This festive spirit, deeply rooted in our culture, inspires me to share a beloved family recipe: my new and incredibly flavorful Ukrainian Breakfast Hash.

My daughter’s journey into Ukrainian dancing began at the tender age of three, and her passion has only deepened with each passing year. It’s more than just an activity; it’s a vital connection to our roots. Beyond the captivating performances and intricate costumes, what I truly cherish about the dance community is the consistent connection with an amazing group of people I see every week. Despite my often-busy schedule, often immersed in writing for this blog, these gatherings are a wonderful reminder of our shared heritage. We are united not only by our children’s dedication but also by our profound cultural ties. Just like dancing, Ukrainian food plays an integral role in our vibrant culture. However, I’ve always noticed a relative scarcity of traditional Ukrainian breakfast dishes. This observation has spurred my creativity, leading me to develop unique Ukrainian breakfast recipes that celebrate our flavors, and this hash is one of my proudest creations.

What is Breakfast Hash?

The term “breakfast hash” is relatively new to my culinary vocabulary, though the concept itself is something I’ve been enjoying and preparing for years. Perhaps I simply never noticed the specific terminology until recently. Essentially, hash is a versatile culinary dish typically composed of chopped meat, potatoes, and often fried onions, all cooked together in a skillet until deliciously browned. This particular recipe elevates the classic hash by infusing it with distinctive Ukrainian ingredients, creating a breakfast experience that is both comforting and extraordinarily delicious. It’s a hearty and satisfying meal, perfect for starting your day or for a leisurely brunch.

  • Kubassa (Ukrainian Sausage) or Kielbasa: This is the star of the dish. The double-smoked Ukrainian sausage adds an unparalleled depth of flavor and a wonderfully savory element that is distinctively Eastern European. Its robust taste pairs perfectly with the other ingredients, making every bite a true delight.
  • Sauerkraut: Fermented cabbage is a staple in Ukrainian cuisine and introduces a tangy, slightly sour note that cuts through the richness of the sausage and potatoes. It adds a layer of complexity and a traditional touch that is simply irresistible. Ensure you squeeze out excess liquid before adding it to the hash.
  • Fresh Dill: Dill is a quintessential herb in Ukrainian cooking, known for its fresh, slightly anise-like flavor. It brightens the entire dish, adding aromatic notes and a vibrant green color. While dried dill can be used, fresh dill truly elevates this recipe.
  • Dry Cottage Cheese (Tvorog): This unique ingredient provides a creamy texture and a subtle, milky tang that balances the other strong flavors. It melts beautifully into the hash, adding a surprising element of softness and richness.

  • Vegetables: Feel free to experiment with other vegetables. Diced carrots, parsnips, or even spinach could be interesting additions, adding more nutrients and flavor dimensions.
  • Spice: A pinch of smoked paprika or a dash of hot sauce could introduce a subtle warmth if you prefer a little heat.
  • Cheese: While dry cottage cheese is traditional, if you can’t find it, a good quality farmer’s cheese or even a blend of Monterey Jack and cheddar could provide a similar creamy element, though the flavor profile would shift slightly.

Many breakfast hash recipes promise quick preparation times of 15-20 minutes, only to reveal in the fine print or comments that this assumes you have pre-cooked or leftover potatoes readily available. I understand the frustration! That’s why I designed this recipe to work beautifully in either situation. If you have leftover baked or boiled potatoes, your prep time will be significantly reduced, making this an incredibly quick meal.

Easy Ukrainian-style breakfast hash using leftover (or microwaved) potatoes with sauerkraut, kubassa/kielbasa, dill and dry cottage cheese. Eggs are optional. Perfect for your next brunch or breakfast potluck!

Ingredients

  • 10 yukon gold or russet potatoes chopped into cubes
  • 2 tablespoon fresh baby dill, chopped (freeze-dried can be substituted)
  • 1 onion (medium) chopped
  • cup sauerkraut liquid squeezed out and finely chopped,
  • 1 375 gram ring double smoked Ukrainian sausage, sliced into circles **you can use any kubassa/Ukrainian sausage but the double smoked made all the difference! (about 1.5 cups)
  • 2 ½ cups mushrooms sliced *approximately 227 g package
  • 1 green pepper chopped
  • 2 tablespoon vegetable oil
  • 3 tablespoon butter
  • 1 cup dry cottage cheese
  • 2 cloves garlic crushed ( I use jarred)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • eggs OPTIONAL

Garnish:

  • dollop sour cream
  • sprigs fresh dill

Instructions

  • Wash and chop potatoes into cubes. Do NOT peel them.

    *If you want to do this the night before, just make sure they are completely covered in water, in an airtight container, and stored in the fridge.

  • Cook potatoes in the microwave on an uncovered plate/platter for approximately 15 -30 minutes or until a fork can easily go through potato pieces, but they are still firm/holding shape.  

    *You can separate them onto two plates/platters if you want them to cook faster.

    ** If you have leftover potatoes, skip this step**

  • Meanwhile:  heat oil in a large skillet/frying pan to medium-high and saute kubassa/kielbasa for 3-4 minutes, stirring and flipping regularly, then remove to a plate. Set aside.
  • Add 1 tablespoon more cooking oil to pan, then saute green pepper, onions and garlic on medium-low for 5 minutes..
  • Add mushrooms and cook for an additional 4-5 minutes, covered stirring constantly.
  • Set aside in a separate bowl.
  • Add butter to pan and cook potatoes, stirring and flipping regularly,  for 15 minutes until browned on the outside and soft inside. *You can move to a bigger pan here (or start with a bigger pan if you don’t want to dirty 2 pans.
  • Then add green pepper/onion mix back to pan, as well as kubassa, sauerkraut, dry cottage cheese, dill, and cook, stirring, for approximately 10 additional minutes.
  • If using eggs: cook eggs to your liking and place on top of hash.

Garnish:

  • Garnish with additional fresh dill and sour cream. Serve warm.
