  • ¾ cup Greek yogurt
  • 1 ½ tablespoon lemon juice from concentrate
  • ¾ teaspoon oregano
  • 1 200 ml/6.7 oz can pitted and sliced black olives
  • 2 teaspoon minced garlic
  • 3 whole eggs
  • 2 sheets fresh lasagna – **about a ¼ of 360 g package- I use Olivieri brand
  • cup light feta cheese
  • 2 cups grated mozzarella cheese

  • tzatziki sauce

Instructions

  • Preheat your oven to 350 degrees F (175 degrees C). Prepare a 12-cup muffin tin by generously spraying each cup with non-stick cooking spray to prevent sticking.
  • In a skillet on your stove top, cook the ground chicken until it is no longer pink and is fully browned. Drain any excess fat.
  • Using a food processor, pulse the garlic bread until it forms fine, even crumbs.
  • To create the base for each lasagna cup, lightly wet your hands with water. Take a handful of garlic bread crumbs, roll it into a ball (about the size of a ping-pong ball), and firmly press it into the bottom of each muffin tin. Each tin should be approximately one-quarter full.
  • Continue to press the crumbs until they are very compacted and form a solid, even layer at the bottom of each muffin tin. This creates a sturdy and flavorful crust.
  • Take your fresh lasagna sheets and chop them into small, manageable pieces, roughly ½-inch squares. These small pieces will integrate perfectly into the filling.
  • In a medium mixing bowl, combine the chopped lasagna pieces with all the remaining ingredients (except for the grated mozzarella cheese). Mix everything thoroughly until well combined.
