  • ½-1 oz semi sweet chocolate – shaved or grated chocolate
  • ¼ cup Optional: fresh raspberries

  • Preparation Note: For optimal texture and flavor, this dessert is best made the night before serving, allowing the layers to meld and the graham crackers to soften perfectly. However, if time is short, a minimum of 1-2 hours of chilling will suffice.
  • Lightly spray a 9×13 inch lasagna pan with non-stick cooking spray to ensure easy removal later.
  • Cook red lentils according to package directions until very soft (or use canned, thoroughly rinsed and drained). Transfer the cooked lentils to a food processor and puree until completely smooth. This step is essential for the dessert’s creamy texture. In a large mixing bowl, combine the pureed lentils, softened light cream cheese, seedless raspberry jam, ground fennel, and anise seed. Beat with an electric mixer until the mixture is smooth and well combined.
  • In a separate, clean bowl, beat the whipping cream until it begins to form soft peaks. Gradually add the white granulated sugar and continue beating until stiff peaks form.
