- ½ cup chia seeds
- 6 tablespoon semi-sweet chocolate chips (gluten-free)
- ½ cup dried cherries

In a large mixing bowl, combine the almond butter, agave syrup, vanilla extract, and unsweetened cocoa powder. Mix thoroughly until all ingredients are well incorporated and form a smooth, paste-like consistency. Add 1 tablespoon of warm water to help with blending.

Next, add the quick oats, sweetened coconut, chia seeds, and semi-sweet chocolate chips to the mixture. Stir vigorously until all the dry ingredients are evenly coated with the wet mixture. Fold in the dried cherries. At this stage, if the mixture still seems too dry or doesn’t easily stick together when pressed, add a little more warm water, one teaspoon at a time, until the desired consistency is achieved. Transfer the entire mixture to the refrigerator to chill for at least 30 minutes. This chilling time is crucial as it helps the mixture firm up, making it much easier to handle and shape into balls.

While the mixture chills, line a cookie sheet with parchment paper. Once chilled, remove the mixture from the refrigerator. Take small portions and roll them into 1 to 1 ½-inch balls. Place the shaped balls spaced apart on the prepared cookie sheet. **Pro Tip: I find it incredibly helpful to wet my hands slightly before and during the ball-forming process. This prevents the mixture from sticking to your hands and helps create perfectly smooth, uniform energy balls.

Freeze the energy balls on the cookie sheet for 4-6 hours, or ideally, overnight. This ensures they firm up completely and maintain their shape.

Once fully frozen, transfer the chocolate cherry energy balls to a freezer-safe bag or airtight container for long-term storage (they can be stored in the freezer for up to 2 months). When you’re ready to enjoy them, simply thaw them at room temperature for a bit, or, for a quick defrost, pop them in the microwave for 10-15 seconds. Alternatively, if you’re taking them to work or school, simply throw a few frozen balls into your lunch bag in the morning, and they’ll be perfectly ready to eat by lunchtime!
