What the recipe *actually* intended was fresh juice squeezed from real lemons! Realemon hadn’t even been invented when that recipe was first published. As a very new cook, how was I supposed to know this vital distinction? Because I was using concentrated lemon juice, I had inadvertently used three to four times the required amount, leading to the highly toxic taste – doh! It was a truly humbling, yet valuable, cooking lesson.
In the end, I learned a crucial rule: never make a recipe for the very first time when you plan to bring it to a party. This simple guideline has served me incredibly well over the years. However, I eventually revisited that lemon pie recipe, this time using freshly squeezed lemon juice, and it was absolutely fantastic! But for future game day parties, I decided to steer clear of the dessert table and instead focus on easy, savory appetizers like this hot artichoke dip.
And although understanding the game of football remains on my bucket list, I’ll endeavor to learn its rules away from the hustle and bustle of a football party, where I’m more likely to be in a focused learning frame of mind. Ingredients
- 1 – 6.5 oz jar artichoke hearts drained, chopped
- ¾ cup parmesan cheese (use freshly grated to ensure gluten-free) grated
- ⅓ cup light mayonnaise
- ½ cup pizza sauce with garlic, preferrably
- 2 tablespoon fresh cilantro chopped
Garnish:
- fresh cilantro sprigs
Instructions

Heat oven to 350°F

Mix all of the dip ingredients together and spoon into a shallow ovenproof dish or 9 inch pie plate (sprayed with non-stick cooking spray)
