  • 8 mini croissants
  • 2 -99 g packages of prepared chocolate pudding (snack packs) about 1.5 cups
  • ½ cup Mascarpone cheese
  • 1 tablespoon Kahlua (optional, or coffee extract)
  • 16 oz container of fresh strawberries, hulled and sliced in quarters, reserve 4 for topping
  • 3 cups whipped cream sweetened to your liking

Garnish

  • 4 whole strawberries, cut in half
  • ¼ cup whipped cream (reserved)
  • 1 oz semi-sweet chocolate, melted

Instructions

  • Carefully slice each mini croissant lengthwise, down the wide side, but ensure you don’t cut all the way through, keeping the two halves attached.
  • In a separate bowl, thoroughly mix the prepared chocolate pudding and mascarpone cheese until smooth and well combined. If desired, stir in the Kahlua (or coffee/vanilla extract) for an authentic tiramisu flavor.
  • Evenly spread the chocolate mascarpone mixture onto the bottom half of each sliced croissant.
  • Next, layer the sliced fresh strawberries over the pudding mixture, distributing them evenly among all the croissants.
  • Fill a pastry bag fitted with a 101 tip (or similar star tip) with the whipped cream. Pipe a generous amount of whipped cream over the strawberries in each croissant, reserving about ¼ cup of whipped cream for later garnish. Gently close the top half of the croissant over the filling. (If you don’t have a pastry bag, a spoon or a Ziploc bag with a corner snipped off will also work.)
  • Place the filled croissants on parchment paper. Melt the semi-sweet chocolate in the microwave at 50% power, stirring every 30 seconds until smooth. Dip a spoon into the melted chocolate.   • To finish, top each eclair with a dollop of the reserved whipped cream and a half strawberry. Serve immediately, or chill until ready to serve. (You can garnish before or after drizzling the chocolate, as preferred).

*Note: For the best flavor and texture, I highly recommend using real whipping cream and whipping it to stiff peaks, then sweetening it to your desired level. If you opt for a spray can of whipped cream for convenience, please note that it melts quickly and the eclairs should be served immediately.
