Melt-in-Your-Mouth 4-Ingredient Whipped Shortbread Cookies with Cornstarch: The Ultimate Easy Holiday Treat
There are certain tastes and textures that instantly transport you back to childhood, and for me, it’s the unparalleled delight of **Whipped Shortbread Cookies**. These delectable, pillowy confections, made with just **4 simple ingredients** and a touch of **cornstarch**, have always been my absolute favorite. Their unique ability to literally melt in your mouth is nothing short of magical, a quality I find irresistible even today.
I recall Christmas gatherings as a child, filled with the warmth of a 1970s-style wood-paneled rec room, the joyful chaos of kids running everywhere, and an incredible, seemingly endless spread of party food. For one glorious night, we had unrestricted access to treats that felt like they were beyond our wildest dreams. Side tables groaned under the weight of triple-decker serving trays, overflowing with olives, savory meats, crisp crackers, and an assortment of cheeses.

Yet, amidst this bountiful feast, it was always the sweets table that truly captivated my attention. Carousels of festive treats showcased everything from classic sugar cookies and spicy gingerbread to dainty bars, tarts, and squares of every imaginable kind. It was a true Christmas “gluttenousganza” of desserts! But without fail, it was the **Whipped Shortbread Cookies** that consistently captured my heart. Their delicate texture and rich buttery flavor made them the star of every holiday spread. While they are particularly popular during the festive season, these delightful cookies are truly perfect for any time of year and are an essential addition to your holiday cookie tray.
The secret to their ethereal texture lies in two key elements: the intensive whipping process and the clever inclusion of cornstarch. This combination creates an extraordinarily light and tender cookie that seems to vanish the moment it touches your tongue. They’re not just a holiday tradition; they’re a timeless testament to how simple ingredients, when prepared with a bit of care, can yield truly extraordinary results.

Essential Tips for Success
Achieving perfectly ethereal whipped shortbread cookies is easy when you follow these key tips. The small details truly make a big difference in the final texture and flavor of these delightful treats.
- Use Unsalted Butter: For these shortbread cookies, unsalted butter is crucial. Whipped shortbread is not meant to be an overly sweet cookie, and the absence of salt in the butter prevents any competing flavors. This allows the pure, rich buttery essence to shine through, contributing to that signature delicate taste. Ensure your butter is softened to room temperature for optimal creaming.
- The Magic is in the Whipping: This cannot be stressed enough! The “whipped” in whipped shortbread is not just a name; it’s the core technique. Creaming the butter and icing sugar thoroughly until light and fluffy incorporates air, which is essential for the cookies’ airy, melt-in-your-mouth texture. A stand mixer is highly recommended for this recipe as it provides consistent power for extended whipping, but a good electric hand mixer can also work if you don’t have a stand mixer. Don’t rush this step – whip for several minutes until the mixture is visibly lighter in color and texture.
- No Greasing Necessary: Resist the urge to grease your cookie sheets. Shortbread cookies are inherently rich in butter, which prevents them from sticking. Greasing the sheets can actually cause the cookies to spread too much and lose their delicate shape. Parchment paper or silicone baking mats are excellent alternatives if you prefer a non-stick surface without added grease.
- Low and Slow Baking: Bake these cookies at a lower temperature (300 degrees F/148 degrees C). This gentle heat ensures they bake through evenly without browning too quickly, preserving their pale, tender crumb. You’re looking for the bottoms to be just lightly golden, indicating they are cooked through but still soft.
- Cool Before Moving: Patience is a virtue when it comes to cooling shortbread. These cookies are very delicate when warm. Allow them to cool on the baking sheet for at least 5 minutes after baking. This crucial cooling period allows them to firm up sufficiently to be transferred to a wire rack without falling apart. Moving them too soon will almost certainly lead to breakage.
- Chill the Dough (Optional but Recommended): While not strictly necessary, chilling the dough in the fridge for 30 minutes to an hour can greatly improve the cookie’s structure. This helps prevent spreading during baking, resulting in perfectly formed cookies. It also makes the dough easier to handle, especially if your kitchen is warm.
🥘 Essential Ingredient Notes
One of the most remarkable aspects of these whipped shortbread cookies is their simplicity. You genuinely only need **4 basic ingredients** to create these sublime treats. Each ingredient plays a vital role in achieving their signature texture and flavor.

- Cornstarch: This is the secret weapon for truly melt-in-your-mouth shortbread. Cornstarch doesn’t develop gluten like flour, so it tenderizes the cookie dough, giving it that delicate, crumbly, and almost powdery texture that dissolves on the tongue. It replaces some of the flour, contributing to the cookie’s unique structure.
- Icing Sugar (Powdered Sugar/Confectioners’ Sugar): Also known as powdered sugar or confectioners’ sugar, icing sugar is preferred over granulated sugar in shortbread for several reasons. Its finely milled texture blends seamlessly with the butter, creating a smooth, delicate dough and contributing to the melt-in-your-mouth sensation. It also adds just the right amount of sweetness without making the cookies overly sugary, allowing the butter flavor to dominate. Ensure it’s sifted to prevent lumps.
- Unsalted Butter: The foundation of any good shortbread is high-quality butter. Using unsalted butter gives you complete control over the salt content of your cookies. In this recipe, we intentionally avoid extra salt to let the pure, rich butter flavor be the star, which is traditional for classic shortbread. Ensure it’s softened, not melted, for the best creaming results.
- All-Purpose Flour: This provides the necessary structure to hold the cookie together. When combined with cornstarch, it creates a balanced dough that is tender but still holds its shape. Sifting the flour can help create a lighter cookie.
Optional Garnishes: While optional, a touch of color and extra festive cheer can be added with sprinkles (nonpareils are classic) or halved maraschino cherries pressed gently into the top before baking. These additions enhance the visual appeal and add a hint of extra sweetness and a chewy bite.
🔪 How to Make Melt-in-Your-Mouth Shortbread Cookies with Cornstarch
Follow these simple steps to create a batch of the most tender, buttery shortbread cookies you’ve ever tasted. The process is straightforward, making it perfect for bakers of all skill levels.
Prep: Begin by preheating your oven to 300 degrees F (148 degrees C). This lower temperature is key for a slow, even bake that results in tender cookies.

In the bowl of a stand mixer fitted with the paddle attachment, combine your softened unsalted butter and sifted icing sugar. While an electric hand mixer can be used, a stand mixer is ideal for achieving the necessary light and fluffy texture.

Beat the butter and icing sugar on medium-high speed for several minutes, scraping down the sides of the bowl as needed, until the mixture is wonderfully combined, light in color, and exceptionally fluffy. This step is crucial for incorporating air and creating the characteristic tender texture.

Gradually add the all-purpose flour and cornstarch to the creamed butter mixture. Continue beating on medium-high speed until all the dry ingredients are fully incorporated and the dough is well blended and uniform. Be careful not to overmix at this stage; mix just until combined.

Lightly dust your hands with a little extra cornstarch to prevent sticking. Roll the shortbread dough into uniform 1-inch balls. Alternatively, use a small cookie scoop for consistent sizing. Place the dough balls approximately 1 inch apart on ungreased baking sheets.

For that classic shortbread look, lightly press each dough ball with the floured tines of a fork. This creates a charming crisscross pattern and helps to slightly flatten the cookies for even baking. Dip your fork in flour between cookies to prevent sticking.

If desired, add decorative nonpareils (colorful sprinkles) or press halved maraschino cherries gently onto the top of each cookie. These garnishes not only add visual appeal but also a subtle textural and flavor contrast.

Bake the cookies in your preheated 300°F (148°C) oven for 20-22 minutes, or until their bottoms are just lightly browned. The tops should remain pale. This indicates they are perfectly cooked without being over-baked and dry. Once baked, remove the baking sheets from the oven.
Important: Allow the cookies to cool on the baking sheets for at least 5 minutes before attempting to move them. This cooling time is vital for them to set and firm up. Once slightly cooled, carefully transfer them to a wire rack to finish cooling completely.

After the initial cooling period on the baking sheets, gently transfer the cookies to a wire cooling rack. This allows air to circulate around them, ensuring they cool evenly and fully, preventing any condensation that could make them soggy. Enjoy your perfectly baked, melt-in-your-mouth whipped shortbread!
HINT *If you try to move the cookies too early, they will fall apart due to their delicate, buttery structure. Patience is key!
💡 Top Tip from a Fellow Baker
This excellent tip came from a reader and significantly enhances the cookie-making process:“Chill the dough in the fridge for a couple of hours – the cookies remain well formed and the dough gets to rest.” Chilling not only helps the cookies maintain their shape better during baking, preventing excessive spreading, but also allows the flavors to meld, potentially leading to an even richer taste. Don’t skip this if you have the time!
👪 Serving Size & Adjustments

If you need a different quantity, you can easily adjust the recipe. By clicking on the serving number in the recipe card below and selecting your desired number of servings, the ingredient quantities will automatically adjust. Just remember, if you decide to double or triple the recipe, you’ll likely need additional baking sheets to accommodate the larger batch.

🌡️ Storing Your Whipped Shortbread Cookies
Proper storage is essential to keep these delicate cookies fresh and delicious. These buttery treats store exceptionally well, making them perfect for preparing ahead of time, especially during busy holiday seasons.
You can store your baked whipped shortbread cookies in an airtight container at room temperature on the counter for up to 1 week. To maintain their delicate texture and prevent them from becoming stale, ensure the container is truly airtight. For best results, consider layering the cookies between sheets of parchment paper to prevent them from sticking together or absorbing moisture.
For longer storage, these cookies freeze beautifully. I often bake a large batch and pop them into the freezer right away. To freeze, arrange the cooled cookies in a single layer on a baking sheet and freeze until solid (this prevents them from sticking together in the container). Once frozen, transfer them to an airtight freezer-safe container, separating layers with parchment paper. They can be frozen for up to 3 months. When ready to enjoy, simply thaw them at room temperature. They taste just as good as freshly baked!

For many, Christmas simply isn’t complete without a batch of these amazing and incredibly easy cookies.
