Ingredients

  • ½ cup almond butter
  • 1 tablespoon agave syrup * or 1 ½ tablespoon honey
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • cup chia seeds
  • 1 ½ cups rolled oats
  • ½ cup fine shredded sweetened coconut
  • 2-4 tablespoons water
  • 1 teaspoon ground fennel seed
  • 1 ½ teaspoons anise
  • cup pistachios or blanched almonds , finely chopped
  • ½ cup dried cranberries
  • ½ cup dried apricots

Instructions

  • In a large mixing bowl, combine the almond butter, agave syrup (or honey), vanilla extract, and almond extract. Stir until thoroughly combined and smooth.
  • Add the rolled oats, shredded coconut, and chia seeds to the wet mixture. Stir well until all the dry ingredients are evenly coated. Add 2 tablespoons of water to start incorporating moisture.
  • Fold in the finely chopped pistachios (or blanched almonds), dried cranberries, dried apricots, ground fennel seed, and anise. Mix thoroughly to ensure all ingredients are well distributed throughout the mixture.
  • At this stage, test the mixture’s consistency. If it still feels too dry and doesn’t stick together easily when pressed, gradually stir in additional water (up to 2 more tablespoons), one tablespoon at a time, until the mixture holds its shape and can be rolled. Transfer the mixture to the refrigerator and chill for about 10 minutes. This makes it firmer and much easier to handle and roll into balls.
  • Remove the chilled mixture from the refrigerator. Take small portions of the mixture (approximately 1 tablespoon each) and roll them into uniform 1-inch balls using your hands. Store the finished energy bites in an airtight container in the refrigerator for up to a week. For longer preservation, they can be stored in the freezer for up to 4 months, making them perfect for convenient meal prep and future healthy snacking!
