Grape Leaves Preparation: Place the grape leaves in a large bowl. Carefully cover them with boiling water and allow them to sit for about 5 minutes. This process softens the leaves, removes any excess brininess from the jar, and makes them more pliable for your sandwich. Once blanched, drain the water thoroughly, gently pat the leaves dry with a clean kitchen towel or paper towels, and set them aside. If you are opting to use blanched Swiss chard leaves as a substitute, follow the exact same preparation method for the best results.

*NOTE: I typically purchase jarred grape leaves from a Superstore in Calgary or a local Mediterranean market, where they are readily available and perfectly preserved for culinary use.

However, if you do find yourself with leftovers or need to make it a few hours in advance, you can store it. Place the cooked sandwich in an airtight container and refrigerate it for a maximum of 1 day.     ( I use Mezzetta) you could substitute any hot pepper/tamed or regular jalapenos

Instructions

  1. Place grape leaves in a large bowl, cover with boiling water, and let sit for 5 minutes. When done, drain thoroughly, pat dry, and set aside (do the same if using Swiss chard leaves).
  2. Meanwhile, combine the pitted black olives and roasted red peppers in a food processor. Pulse and blend until they are very finely chopped, almost pureed, but still retaining some texture.
  3. Transfer the pepper/olive mixture to a wide, shallow bowl. Add the egg, milk, and oregano. Whisk vigorously until the egg is fully broken up and completely incorporated into the mixture.
  4. Lightly spray a frying pan with non-stick spray and heat it over medium heat on your stovetop. Working one at a time, take each of the 4 pieces of bread and fully coat them in the egg mixture, ensuring both sides are well-saturated.
  5. Immediately transfer the coated bread slices to the preheated frying pan. Cook all 4 pieces until they are lightly browned and no longer soggy on both sides (this usually takes about 5 minutes per side). Once cooked, transfer them to a clean work surface, such as a cutting board.
  6. In a small bowl, thoroughly mix the mayonnaise with the minced garlic and lemon rind to create your flavorful aioli.
  7. Take two pieces of the cooked bread and spread the garlic-lemon mayo mixture on one side of each. On the other two pieces of bread, spread the honey mustard. Now, layer the ham and Swiss cheese onto the mustard-coated bread slices, dividing equally between what will be your two sandwiches.
  8. Next, carefully lay 4 of the prepared grape leaves on top of the Swiss cheese on each sandwich base. Sprinkle a generous amount of finely crumbled feta cheese over the grape leaves. Finish with the deli-sliced pepperoncini, again divided between both sandwiches. Finally, top each with the remaining bread slices (mayo-side down).
  9. Return the assembled sandwiches to the frying pan. Cook on low heat, covered, until the cheese inside is perfectly melted and the exterior of the bread is deliciously crunchy (this usually takes about 3-5 minutes). You may need to flip the sandwiches once or twice to ensure even browning and melting.
  10. Serve your Mediterranean Monte Cristo sandwiches HOT, of course, and enjoy every flavorful bite!

Pepperoncini: (I prefer Mezzetta brand) you can substitute with any hot pepper, tamed jalapeños, or regular jalapeños depending on your heat preference.

Kalamata black olives – Regular black olives can be used for a milder olive flavor.

Bread: Any sturdy bread will work, but white bread typically holds up best for Monte Cristos, providing an ideal texture when fried.

Make it WW friendly: Opt for light feta cheese, light Swiss cheese, non-fat ham, light mayonnaise, and WW friendly bread to reduce calories and fat.

*NOTE: I purchase Mezzetta products at Sobey’s in Calgary, but they are also widely available online. While you can use any roasted red peppers, I haven’t seen pepperoncini from other brands – it seems to be a signature Mezzetta product.
