Pizza Dough

  • 1 pizza dough recipe * Use your favorite recipe, like our quick 15-minute pizza dough for best results.

Filling

  • ¾ cup pizza sauce * Choose your favorite store-bought brand, or opt for homemade for fresh flavor. (I often use Primo’s traditional).
  • ¾ cup bacon (or any meat) chopped * Feel free to substitute with diced ham, pepperoni, turkey bacon, or cooked sausage. Ensure it’s finely chopped.
  • 1 cup shredded mozzarella cheese (Use lactose-free or dairy-free if needed).
  • cup red onion, chopped

Instructions

  • Preheat your oven to 375 degrees F (190 degrees C). Prepare your chosen pizza dough according to its specific recipe or package instructions. Our quick and easy, naturally dairy-free 15-minute pizza dough is highly recommended (see notes for other recommendations).
  • Turn the prepared dough out onto a lightly floured surface. This helps prevent sticking as you roll.
  • Using a rolling pin, roll out the pizza dough evenly to a thickness of approximately ⅛ inch. Consistency in thickness ensures even baking.
  • Using a round cutter (such as a cookie cutter or the rim of a mug, about 4 inches in diameter), cut out circular pieces of dough.
  • Lightly spray your muffin pan with non-stick cooking spray. Carefully press each dough circle into the muffin tin cups, ensuring they form a neat cup shape.
  • Gather any remaining dough scraps, gently re-roll them, and cut out additional circles until you have 12 dough cups in total. You should have no problem getting 12 from a standard batch.

Prepare and Bake the Filling:

  • In a small mixing bowl, combine all your desired toppings: pizza sauce, chopped red onion, sliced black olives, cooked meat (like bacon), and precisely half (½ cup) of the shredded mozzarella cheese. Thoroughly mix these ingredients, reserving the other ½ cup of cheese for topping.
  • Spoon approximately 2 tablespoons of the prepared filling mixture into each dough-lined muffin cup, ensuring an even distribution among all 12. Then, sprinkle the remaining ½ cup of mozzarella cheese on top of each cupcake.
  • Bake the pizza cupcakes in your preheated oven for 14 to 16 minutes, or until the dough edges are golden brown and the cheese is beautifully melted and bubbly.
  • Immediately remove the pizza cupcakes from the muffin tins. This is important to prevent the bottoms from becoming soggy. Serve them warm and enjoy!

  • Don’t overload with sauce. Use just enough to coat the filling and keep the flavors balanced, as too much sauce can make the bottoms soggy.
  • Pre-cook watery toppings. Vegetables like mushrooms, peppers, or spinach release moisture while baking. Sauté them first to remove excess liquid and prevent soggy cupcakes.
