Ingredients
- 6 eggs
- ¼ teaspoon salt
- ¼ cup sriracha mayonnaise * gluten-free
- 2 teaspoon red onion, finely chopped, minced or more
- 3 teaspoon rice vinegar, seasoned or unseasoned *gluten-free
- 2 teaspoon dry mustard *gluten-free
- ½ teaspoon sugar
- 3 teaspoon mint, finely chopped
- ½ teaspoon minced garlic
- 3 teaspoon cilantro, finely chopped
- ½ of 1 carrot *see photo in instructions
- 3 cucumber slices, quartered
Garnish (optional)
- additional sriracha sauce
- lime wedges
Instructions

Boil eggs, then immediately transfer them to an ice bath or cold water to cool completely. Refer to the video in the NOTES section for instructions on achieving perfectly cooked eggs without a green ring.

Once cooled, carefully peel the eggs and slice them in half lengthwise.

Gently remove the yolks from the egg whites and place them in a separate mixing bowl. Arrange the empty egg white halves on your serving platter.

Using a fork, mash the yolks thoroughly until smooth. Add the sriracha mayonnaise, dry mustard, sugar, rice vinegar, salt, and finely chopped red onion to the bowl with the mashed yolks. Mix everything together very well until creamy and evenly combined. Fold in the fresh chopped mint and cilantro.

Transfer the yolk mixture to a pastry bag fitted with a 1M star tip (or your preferred piping tip) for a decorative finish. Pipe the mixture evenly into each of the egg white halves. Alternatively, if you don’t have a pastry bag, simply use a small spoon to carefully scoop and fill the egg white centers.

Prepare your carrots by julienning them with a julienne peeler or a sharp knife to create thin strips. (A cheese grater can also work for finely shredded carrots.) Top each deviled egg with about 4-6 pieces of julienned carrots for color and crunch.

Place a quartered cucumber slice in the center of each deviled egg, adding another layer of refreshing crispness.

For an extra kick, drizzle additional sriracha sauce over the eggs. Squeeze fresh lime juice over them if desired, and serve with extra lime wedges and fresh mint sprigs for garnish. If you prefer a less spicy option, a sprinkle of paprika makes a lovely garnish.
