If I wanted to experience the comforting taste of our family’s holiday food traditions, I had no choice but to learn to recreate all our beloved favorites myself. A Look at Our Family’s Cherished Holiday Menu

Just like our family’s iconic Old-Fashioned Bread Stuffing, Auntie Carol’s famous Sweet & Sour Slow Cooker Meatballs, our refreshing family Caesar Salad (typically served without chicken for holiday dinners), and my Mom’s hearty Scottish Cabbage Rolls, this green bean and mushroom recipe is an indispensable staple on our holiday dinner table. For me, it doesn’t just symbolize Christmas; more profoundly, it whispers, “I’m home for Christmas!” And as anyone who has been away knows, there are few feelings better or more comforting than being home for the holidays.

Oh, and I absolutely cannot forget the grand finale of desserts and baking! Our holiday table is never complete without Grandma’s legendary Butter Tarts and melt-in-your-mouth Whipped Shortbread. Over the years, I’ve proudly contributed some of my own creations to this cherished baking tradition, including my festive Cranberry Pistachio Biscotti and bright, zesty Gingerbread Lime Bars, adding new layers of flavor to our generational spread.

🥘 Essential Ingredient Notes for Perfection

Gathering the right ingredients is the first step to creating these exquisite Christmas dinner green beans. Here’s a detailed look at what you’ll need and why each component is important:

  • Fresh green beans. Opt for crisp, bright green beans (often called string beans) for the best texture and flavor. You can purchase them in pre-packaged bags or buy them loose in bulk. Whichever you choose, ensure you trim off both ends before cooking to remove any tough, fibrous bits and achieve an optimal eating experience.
  • Fresh Mushrooms. I typically use classic white button mushrooms, which offer a mild, earthy flavor that complements the green beans beautifully. However, cremini mushrooms (also known as baby bellas) are an excellent alternative if you prefer a slightly deeper, more robust mushroom flavor. Slice them to a consistent thickness for even cooking.
  • Unsalted butter. I always recommend using unsalted butter in my recipes. This allows for precise control over the overall saltiness of the dish, giving you the freedom to season to your exact preference without worrying about it becoming too salty.
  • Garlic powder. For a quick and effortless way to infuse a bold, aromatic burst of garlicky flavor into this green bean recipe, garlic powder is indispensable. It disperses evenly and provides consistent taste throughout the dish.
  • Onion powder. Often underestimated, onion powder adds a subtle yet distinct depth of savory flavor. It provides a foundational sweetness and umami that perfectly rounds out the profile of these green beans and mushrooms, enhancing their overall deliciousness!
  • Salt and Black pepper. These are your essential seasonings. Always add salt and freshly ground black pepper to taste, adjusting as needed to bring out the best in the fresh vegetables and aromatic butter.

📖 Creative Variations & Smart Substitutions

While the original recipe is fantastic as is, don’t hesitate to experiment with these simple variations to tailor the dish to your taste or dietary needs:

  • Garlic powder – If you prefer the potent aroma and texture of fresh garlic, you can easily substitute 1-2 teaspoons of finely minced fresh garlic for the garlic powder. Add it to the skillet a minute before the mushrooms are done to prevent burning.
  • Butter– For a slightly lighter version, substitute half of the butter with high-quality olive oil. You can also opt for a light butter substitute if you’re further reducing fat. If you use salted butter, remember to omit or significantly reduce the added salt in the recipe to avoid over-seasoning.
  • Salt – Instead of regular table salt, consider using kosher salt or flaky sea salt. These options offer a different texture and sometimes a milder, cleaner flavor profile that can enhance the overall taste.

🔪 Step-by-Step Guide: How to Make Green Beans and Mushrooms

Creating this delightful side dish is straightforward. Follow these simple steps for perfect results every time:

beans with stringy ends being cut off, demonstrating proper trimming technique
  1. Step 1: Prepare the Green Beans. Begin by carefully trimming both ends of your fresh green beans. This removes the tough stem and any stringy tips. Next, add the trimmed green beans to a large saucepan filled with cold water. Place the saucepan over high heat and bring the water to a rolling boil. Once boiling, reduce the heat to medium-high and cook the green beans for approximately 10 minutes, or until they are just tender-crisp. You should be able to easily pierce one with a fork, but they should still retain a slight bite.

  1. Step 2: Slice the Mushrooms. If you didn’t purchase pre-sliced mushrooms, now is the time to prepare them. Clean your fresh mushrooms gently with a damp cloth or mushroom brush, then slice them evenly. For the best texture and visual appeal, I highly recommend slicing them to a thickness similar to what is shown in the accompanying photo – not too thin that they disappear, and not too thick that they don’t cook through properly.

  1. Step 3: Sauté and Combine. While the green beans are cooking, heat a large skillet (or your electric skillet, as suggested in our top tip!) over medium heat. Add the unsalted butter and allow it to melt. Once shimmering, add the sliced mushrooms to the skillet and sauté them for 1-2 minutes until they just begin to soften. Next, sprinkle in the garlic powder, onion powder, and a pinch of salt. Continue to cook, stirring frequently, for about 10 minutes until the mushrooms are tender and beautifully caramelized. Remove the mushroom mixture from the heat and set it aside. Once your green beans are cooked, drain them thoroughly and add them to the skillet with the sautéed mushrooms. At this point, you can add additional garlic powder, onion powder, or salt to taste, if desired. Finish with a sprinkle of black pepper. Continue to sauté the mixture, stirring frequently in a “stir-fry” style, for another 5-8 minutes. This final cooking step allows the flavors to meld together perfectly, creating a harmonious and incredibly tasty side dish. Serve hot and enjoy!

Chef’s Top Tip for Holiday Hosting

For ultimate convenience, especially during a busy holiday meal prep, my Auntie Carol often prepares these delectable sautéed green beans and mushrooms in an electric skillet (affiliate link). This genius hack allows the dish to be cooked and then effortlessly transferred to the serving table, where it can be plugged in and kept perfectly warm throughout the meal. This not only ensures your side dish is always at the ideal temperature but also, and crucially, frees up valuable real estate on your stovetop – a true blessing when you’re juggling multiple dishes! Of course, if an electric skillet isn’t available, a large, heavy-bottomed skillet or non-stick frying pan will work just as well.

🌡️ Storage Guidelines

Proper storage is key to enjoying your leftovers. Store any remaining green bean and mushroom sauté in an airtight container in the refrigerator. It will maintain its freshness and flavor for up to 4 days. Unfortunately, this particular recipe does not stand up well to freezing, as the texture of both the green beans and mushrooms tends to become mushy upon thawing.

This Green Bean with Mushroom recipe is designed to generously serve 8 people, with one serving size being approximately ⅛ of the entire dish. If you’re cooking for a smaller gathering or fewer individuals, you can easily cut this recipe in half by utilizing the convenient serving size adjuster on my recipe card below. Simply click on the serving size, select your desired number of servings, and the ingredient amounts will automatically adjust accordingly. However, be warned: this dish is so popular and utterly delicious, you might find yourself wanting to double the recipe, especially if it’s one of your featured Christmas dinner sides for a larger family celebration!

🔢 Weight Watchers Points

This savory green bean and mushroom recipe impressively comes in at just 4 Weight Watchers points per serving, making it a fantastic and flavorful option for those following the program. If you’re looking to lighten it up even further without compromising on taste, consider swapping out some of the traditional butter for a lighter butter substitute.

My Auntie Carol, like many seasoned home cooks, has a wonderful knack for cooking by feel rather than strict measurements. When I initially tried to document her recipe, she wasn’t entirely sure about the exact quantities of everything she used. This meant a little bit of trial and error on my part to nail down the perfect balance of flavors and replicate her beloved dish. But I believe I’ve finally got it just right! Remember, however, that the amounts of seasoning can always be adjusted to your personal liking – feel free to add a little more garlic or onion powder if you crave an extra kick.

At its heart, this green beans with mushrooms recipe is beautifully uncomplicated. It’s a simple recipe, utilizing just a few humble ingredients, and that’s precisely what I adore about it. But beyond its simplicity, there’s a profound sense of comfort derived from its predictability and consistent deliciousness. It’s the taste of tradition, familiar and reassuring, year after year. So, whether you’re searching for the perfect quick side dish for your weeknight dinners, aiming to expand your holiday dinner repertoire, or seeking a lighter, healthier alternative to the traditional green bean casserole while still enjoying flavorful green beans for Christmas dinner, I wholeheartedly encourage you to give this recipe a try. It promises both exceptional taste and cherished memories.

Equipment

  • electric skillet recommended, but can use frying pan

Ingredients

  • 800 g fresh green beans * I bought 2 (400g) pkgs, about 5- 6 cups
  • 454 g container of fresh mushrooms, sliced
  • 3 tablespoon unsalted butter
  • 1 ½ tablespoon garlic powder
  • 2 teaspoon onion powder
  • black pepper to taste
  • ¼ teaspoon salt, depending on your liking * or alternatively, you can just use salted butter
US Customary – Metric

Instructions

  • Trim fresh green beans on both ends to remove tough bits.
  • Slice the fresh mushrooms to your preferred thickness. I recommend slicing them as thick as shown in the photo for optimal texture.
  • Add the trimmed green beans to a large saucepan with cold water and bring to a boil over high heat. Cook over medium-high heat for about 10 minutes until they are just tender (a fork should easily pierce them).
  • Meanwhile, heat a large skillet (or an electric skillet) over medium heat. Add the butter and let it melt. Sauté the sliced mushrooms in the melted butter for 1-2 minutes until they start to soften. Stir in the garlic powder, onion powder, and initial ¼ teaspoon of salt, cooking frequently for about 10 minutes until mushrooms are tender and slightly browned. Remove the mushroom mixture from heat and set aside.
  • Drain the cooked green beans thoroughly and add them back to the skillet with the mushroom mixture. If desired, add additional garlic powder, onion powder, or salt to taste. Sprinkle with a little black pepper.
  • Continue to sauté the combined ingredients, stirring frequently (in a stir-fry motion) for another 5-8 minutes. This final step allows the flavors to fully combine and warm through.
  • Serve hot and savor every delicious bite!
